Description
A soft textured washed rind cheese that develops a distinctive, meaty pungency with age. It is handmade by Charles Martell on his farm in the heart of Gloucestershire.
The name comes from a variety of pear called Stinking Bishop, the juice of which is made into a perry and used to wash the cheese. That is what gives it its nose. The texture should be somewhere around thick clotted cream, though on occasion it is spoonable rather than sliceable.
It was made infamous by a cameo in the Wallace and Gromit film Curse of the Were-Rabbit. The smell is powerfully pungent but the flavour is rather delicate and herbaceous, which surprises most people.

A whole cheese weighs approximately 1.6kg.
All cheeses are hand cut, therefore the weights listed are approximate. We work very hard to cut them as accurately as we can and happy to offer advice on purchasing the right amount if you are unsure. If you would like a price for larger weights or whole cheeses, please call us.
Delivery
Your cheese is cut fresh to order, wrapped and packed by hand and delivered on the day you choose. We deliver across the UK from Tuesday to Friday each week. If you are ordering for a gift or special occasion we advise you to always allow an extra day in case of any unforeseen courier delays.
Recipe / pairing suggestion
Serve it with a crispbread or a plain sourdough and let the cheese do the talking. A perry or a dry cider is the natural drink.
Smells far worse than it tastes, which is the whole joke. Delicate and herbaceous once you get past the door.

How should I store my cheese once it arrives?
Cheese is best kept in the fridge wrapped in the waxed paper or packaging it arrives in. Avoid plastic wrap, as cheese needs to breathe.
How long will my cheese last?
Most cheeses will last 1-2 weeks if stored properly. Harder cheeses tend to last longer than soft cheeses.
Do you deliver nationwide?
Yes, we deliver throughout the UK mainland. Some remote areas may have longer delivery times.
When will my cheese order arrive?
Orders placed before 12pm are dispatched the same day for next-day delivery. We deliver Tuesday to Friday.
Is your cheese pasteurised?
We stock both pasteurised and unpasteurised cheeses. Each product page clearly states whether the cheese is pasteurised.
