Description

Petit Langres AOC is a soft, succulent, creamy washed rind cheese with a firm, dense, silky interior. Drum shaped with an indented top, known as the fontaine, which lets the brine pool in the crater and seep slowly down into the cheese. That is what gives it the richer consistency, pungent nose and fruity flavour.

It is traditional to pour a little white wine or champagne into the well of the cheese. The wheels are washed twice weekly with a mixture of brine and annatto, an orange pigment from the South American annatto shrub, which is what produces the russet rind. The cheese is usually matured for around a month to build its powerful and penetrating bouquet.

It originates from the Langres plateau, near the source of the Seine in the Champagne region, on the border with Burgundy.

How much to buy

The individual cheese weighs approximately 180g.

All cheeses are hand cut, therefore the weights listed are approximate. We work very hard to cut them as accurately as we can and happy to offer advice on purchasing the right amount if you are unsure. If you would like a price for larger weights or whole cheeses, please call us.

Delivery

Your cheese is cut fresh to order, wrapped and packed by hand and delivered on the day you choose. We deliver across the UK from Tuesday to Friday each week. If you are ordering for a gift or special occasion we advise you to always allow an extra day in case of any unforeseen courier delays.

Recipe / pairing suggestion

Suggestion – WALNUT, HONEY & OLIVE OIL CRACKERS

A honeyed cracker balances the pungency. Champagne is the traditional pairing and, unusually, is also an ingredient if you pour a little into the fontaine.

Pour a splash of champagne into the dip on top an hour before serving. It is not a gimmick, it genuinely works.
