Ribblesdale Ash is an elegant soft goats cheese coated in a fine layer of edible vegetable ash. The ash gives the cheese its striking appearance and encourages the development of a delicate natural rind as it matures.

Made from British goats milk, it is carefully ripened to strike a balance between freshness and richness. As it ages the firm, chalky centre gradually softens beneath the rind, creating a wonderful contrast in texture.

Hand-made at a small dairy in Hawes, North Yorkshire, Ribblesdale were among the first cheese makers to launch a goat curd, which has become enormously popular. During production the curds are drained, hand portioned and shaped into logs, then lightly brushed with a dusting of ash. The logs take around two weeks to mature and develop a distinctive wrinkly rind that protects the smooth, creamy white paste within.

All cheeses are hand cut, therefore the weights listed are approximate. We work very hard to cut them as accurately as we can and happy to offer advice on purchasing the right amount if you are unsure. If you would like a price for larger weights or whole cheeses, please call us.

Delivery

Your cheese is cut fresh to order, wrapped and packed by hand and delivered on the day you choose. We deliver across the UK from Tuesday to Friday each week. If you are ordering for a gift or special occasion we advise you to always allow an extra day in case of any unforeseen courier delays.

Recipe / pairing suggestion

Lovely on toast with a drizzle of honey, or crumbled over roasted beetroot. A crisp white with some acidity is the drink to reach for.

Give it a week in the fridge and watch the centre go from chalky to spoonable. Completely different cheese.

How should I store my cheese once it arrives?

Cheese is best kept in the fridge wrapped in the waxed paper or packaging it arrives in. Avoid plastic wrap, as cheese needs to breathe.

How long will my cheese last?

Most cheeses will last 1-2 weeks if stored properly. Harder cheeses tend to last longer than soft cheeses.

Do you deliver nationwide?

Yes, we deliver throughout the UK mainland. Some remote areas may have longer delivery times.

When will my cheese order arrive?

Orders placed before 12pm are dispatched the same day for next-day delivery. We deliver Tuesday to Friday.

Is your cheese pasteurised?

We stock both pasteurised and unpasteurised cheeses. Each product page clearly states whether the cheese is pasteurised.

Do you offer subscriptions or cheese boxes?
