Description

Pecorino is the term used for Italian cheeses made from 100% ewes milk. Pecorino Romano PDO is generally used as a sharper alternative to Parmesan: ideal for pasta and perfect with cured meats and olives. Aged at length, it has a dry, granular texture and a strong taste.

Of the four Pecorino cheeses that hold Protected Designation of Origin status, Pecorino Romano is one of the most ancient types of cheese as well as the most famous outside Italy. It can only be made on the islands of Sardinia, in Lazio, and in the Tuscan province of Grosseto.

It dates back to Roman times, as the name suggests, when it formed part of the staple diet of soldiers at war.

How much to buy

All cheeses are hand cut, therefore the weights listed are approximate. We work very hard to cut them as accurately as we can and happy to offer advice on purchasing the right amount if you are unsure. If you would like a price for larger weights or whole cheeses, please call us.

Recipe / pairing suggestion

Suggestion – PERELLO GORDAL PITTED OLIVES

Grate it over pasta where you would otherwise reach for Parmesan, particularly a cacio e pepe or a carbonara. On a board, olives and cured meats.

Sharper and saltier than Parmesan. For a cacio e pepe there is no substitute.
