Baron Bigod is an exquisite Suffolk-made, bloomy, pasteurised cows milk cheese in the style of a classic Brie de Meaux. A full-flavoured soft cheese with a nutty, mushroomy rind, its smooth, silky golden paste will often ooze out over a fresh, citrussy centre. Expect long-lasting flavours of warm earth, farmyard and mushroom, with occasional notes of citrus and truffle.

It is a large wheel, 28cm across, made with the delicate milky flavours of Montbeliarde cows milk. That milk is protein-rich and ideal for cheesemaking, and in France the same traditional breed produces some of the finest cheeses in the world, Comte and Vacherin Mont d'Or among them.

Baron Bigod is hand-made by Jonny and Dulcie Crickmore, a third generation family farm in Bungay, Suffolk, aiming to set the standard for dairy sustainability. They use only gravity-fed milk to protect the fragile fat globules during production, with no pumps at any stage. The curds are hand-ladled into large round moulds using traditional pelle-a-brie ladles, then hand salted and aged in a humid, cave-like environment.

All cheeses are hand cut, therefore the weights listed are approximate. We work very hard to cut them as accurately as we can and happy to offer advice on purchasing the right amount if you are unsure. If you would like a price for larger weights or whole cheeses, please call us.

Delivery

Your cheese is cut fresh to order, wrapped and packed by hand and delivered on the day you choose. We deliver across the UK from Tuesday to Friday each week. If you are ordering for a gift or special occasion we advise you to always allow an extra day in case of any unforeseen courier delays.

Suggestion – FIREFLAME CHILLI JAM

Serve properly ripe and at room temperature. A chilli jam is the classic foil for a brie this rich, the heat cutting straight through the buttery paste.

Give it an hour out of the fridge and it will slump across the board. That is exactly what you want.

How should I store my cheese once it arrives?

Cheese is best kept in the fridge wrapped in the waxed paper or packaging it arrives in. Avoid plastic wrap, as cheese needs to breathe.

How long will my cheese last?

Most cheeses will last 1-2 weeks if stored properly. Harder cheeses tend to last longer than soft cheeses.

Do you deliver nationwide?

Yes, we deliver throughout the UK mainland. Some remote areas may have longer delivery times.

When will my cheese order arrive?

Orders placed before 12pm are dispatched the same day for next-day delivery. We deliver Tuesday to Friday.

Is your cheese pasteurised?

We stock both pasteurised and unpasteurised cheeses. Each product page clearly states whether the cheese is pasteurised.
