Description

Tete de Moine is a full-flavoured, semi-firm Swiss cheese with a natural rind, traditionally cut on a Girolle machine or cheese curler, a circular wooden implement that shaves the cheese into delicate petals.

It is always best enjoyed in thin slivers, which is what brings out its complex flavours, and is delicious with fresh fruit. It is also very good melted over hot new potatoes for a lunch or supper dish, much as you would use raclette.

The cheese comes from the Jura region in north west Switzerland, a high mountainous area where the cattle graze on sweet grasses and herbs on the alpine pastures. That is where the distinctive sweetness, flavour and aroma come from.

How much to buy

A whole cheese weighs approximately 800g.

All cheeses are hand cut, therefore the weights listed are approximate. We work very hard to cut them as accurately as we can and happy to offer advice on purchasing the right amount if you are unsure. If you would like a price for larger weights or whole cheeses, please call us.

Delivery

Your cheese is cut fresh to order, wrapped and packed by hand and delivered on the day you choose. We deliver across the UK from Tuesday to Friday each week. If you are ordering for a gift or special occasion we advise you to always allow an extra day in case of any unforeseen courier delays.

Recipe / pairing suggestion

Suggestion – THYME INFUSED HONEY

Honey and fresh fruit against the shaved petals is the classic serving. Shave it rather than slicing it, the texture on the tongue is completely different.

Shaved into petals it is a different cheese entirely. Worth owning a Girolle just for this.
