Raclette Smoked

- Cows Milk
- Unpasteurised
- Switzerland
Description
A brushed rind Swiss mountain cheese, smoked over a wood fire after making, which gives the raclette a delicate smoky flavour. Delicious cooked on a raclette machine, or served the traditional way, hot and melted over new potatoes. A world-famous cheese with a twist.
To call Raclette a cheese is an understatement, it is a national dish. Melted cheese dishes appear in medieval texts from Swiss convents as early as 1291, eaten by peasants in the Alpine regions of Valais and Fribourg, and Savoie and Haute-Savoie across the border. Cow herders carried cheese with them when moving cattle to and from mountain pastures, setting it beside the campfire in the evening to soften before scraping it onto bread.
How much to buy
We suggest 250g (around 3 slices) to 500g (around 6 slices) per person, depending on how much you can eat. We can eat a lot. This raclette is made in blocks rather than wheels, since it is generally sliced and ready for the melting pans. If you would like a wheel or part of a wheel we can get this for you, please email info@thecheesesociety.co.uk.
All cheeses are hand cut, therefore the weights listed are approximate. We work very hard to cut them as accurately as we can and happy to offer advice on purchasing the right amount if you are unsure. If you would like a price for larger weights or whole cheeses, please call us.
Delivery
This Swiss Raclette comes in rectangular wedges ready for melting pans. If you want it in slices, please ask or add it to the notes at checkout.

Recipe / pairing suggestion
Suggestion – DRIVERS SWEET CORNICHONS
Cornichons, cured meats and hot new potatoes. The smoke adds another layer to an already rich dish, so keep the accompaniments sharp.
Smoke and molten alpine cheese over potatoes. Not subtle, not trying to be.
