An artisan, raw milk, naturally rinded Caerphilly, originally made by brothers and business partners Todd and Maugan Trethowan on their farm near Llanddewi Brefi in the Teifi Valley, and now made by Maugan and his wife Kim in Somerset.

In search of the perfect milk the family moved production from Wales to north Somerset in 2014, investing in a new dairy built to their specific needs. Todd learnt the original recipe from a third generation cheese maker in Somerset, and despite being considered a Welsh cheese the Gorwydd recipe was in use in Somerset in the early part of the twentieth century.

Following a traditional recipe and working the curds by hand, the cheeses are matured for a minimum of three to four months, longer than most Caerphillys. The result is a wonderfully deep flavour that stays fresh and clean tasting with slight citrus notes, alongside a surprisingly creamy, moist texture. It has deservedly won a number of prestigious cheese awards.

A whole cheese weighs approximately 4kg. If you would like a whole wheel, please contact us and we can arrange it for you.

All cheeses are hand cut, therefore the weights listed are approximate. We work very hard to cut them as accurately as we can and happy to offer advice on purchasing the right amount if you are unsure. If you would like a price for larger weights or whole cheeses, please call us.

Delivery

Your cheese is cut fresh to order, wrapped and packed by hand and delivered on the day you choose. We deliver across the UK from Tuesday to Friday each week. If you are ordering for a gift or special occasion we advise you to always allow an extra day in case of any unforeseen courier delays.

The breakable, lemony centre and the mushroomy rind do different things, so eat a wedge from the outside in. Good with pickles, good with a pint.

Two textures in one wedge, chalky in the middle and creamy under the rind. Best Caerphilly there is.

How should I store my cheese once it arrives?

Cheese is best kept in the fridge wrapped in the waxed paper or packaging it arrives in. Avoid plastic wrap, as cheese needs to breathe.

How long will my cheese last?

Most cheeses will last 1-2 weeks if stored properly. Harder cheeses tend to last longer than soft cheeses.

Do you deliver nationwide?

Yes, we deliver throughout the UK mainland. Some remote areas may have longer delivery times.

When will my cheese order arrive?

Orders placed before 12pm are dispatched the same day for next-day delivery. We deliver Tuesday to Friday.

Is your cheese pasteurised?

We stock both pasteurised and unpasteurised cheeses. Each product page clearly states whether the cheese is pasteurised.

Can I visit your shop and café?

Absolutely! Our shop and café is located at 1 St Martin's Lane, Lincoln. We're open Monday to Saturday.
