It has a clean, delicate nutty flavour.\u003c\/p\u003e\n\u003cp\u003eIt is made using fresh unpasteurised milk from their 230 strong herd of pedigree Holstein Friesians and matured for around four to six months, using vegetarian rennet. Annatto, a natural colour obtained from the seed of the achiote tree from South America, is added to give the cheese its rich full red colour.\u003c\/p\u003e\n\u003cp\u003eThe cheese is made on the farm in large 20kg drum-shaped truckles.\u003c\/p\u003e\n\u003cp\u003ePlease note: the rind on Lincolnshire Red is not edible.
