This award-winning Supreme Champion is hard pressed and full fat, cheddar in style but slightly open in texture, with rich herbaceous notes that linger on the palate.\u003c\/p\u003e\n\u003cp\u003eSimon Jones started making it in 1992 and is the fourth generation of his family to run the farm, set in the heart of the rolling Lincolnshire Wolds. His father turned to dairy farming in 1970, and after college Simon turned his hand to cheese. It is then placed inside a thermal foil pouch with a frozen gel pack to keep it cool on its journey.
