Creamy with a definite sharpness and rich, complex flavours, encased in a thin grey rind.\u003c\/p\u003e\n\u003cp\u003eCote Hill Blue is hand-made on the farm by Michael and Mary Davenport and their sons Joe and Ross, using milk from their eighty pedigree Friesian cows. The family have farmed at Cote Hill Farm, Osgodby, in the heart of the Lincolnshire Wolds for over thirty years.\u003c\/p\u003e\n\u003cp\u003eThe milk goes straight from the cows to the cheese-making rooms on the farm without pasteurisation. The result is a fine balance between rich creaminess and a peppery bite, maturing from a lightly chalky centre to a soft, runny texture. The moulds on the natural rind do a great deal of the flavour work.
