St Felicien is a rich and creamy little cow’s milk cheese which originates from the farms in the Rhone-Aples region of France. The French call this cheese Caille Doux. This is a delicate and intensely creamy cheese and is at its best at room temperature, drizzled with honey.

St Felicien is a rich and creamy little cows milk cheese which originates from the farms in the Rhone-Aples region of France. The French call this cheese Caille Doux. This is a delicate and intensely creamy cheese and is at its best at room temperature drizzled with honey. 

The cheese is pale beige in colour with a soft bloomy rind and smooth, silky texture. The taste is creamy and delicate due to the soft curds used in the making process. This is a local farmhouse speciality, the lactic curd has a mild fresh pate with some acidity and tang to the finish. The cheese will develop some bluey blooms as it matures, this is perfectly normal and characteristic of this lovely cheese.
