Producers craft Pecorino Romano exclusively in Sardinia, Lazio, and the Tuscan Province of Grosseto, with each region offering a slightly different version depending on the ageing process.

Pecorino Romano dates back to Roman times when soldiers relied on it as a staple food during wartime. Today, artisans make this Italian cheese using pasteurized milk and traditional methods specific to its regions. The cheese ages for 8 to 12 months, developing a dry, granular texture and a robust flavour.

PECORINO ROMANO often serves as a sharper alternative to Parmesan. It complements pasta dishes and pairs well with cured meats and olives. Pair it with oaky white wines or bold Italian reds for a complete culinary experience.
