This award-winning Supreme Champion cheese is a hard pressed, full-fat cheese – cheddar in style, but slightly open in texture. Rich herbaceous notes linger on the palate. Simon Jones who started making Lincolnshire Poacher cheese in 1992, is the fourth generation of his family to be running the farm which is set in the heart of the rolling Lincolnshire Wolds. His father turned to Dairy farming in 1970 and after college Simon decided to turn his hand to cheese making. With the help of their 230 strong herd of pedigree Holstein Friesian Cows, Simon and his brother Tim who joined the company in 2000, use unpasteurised milk and traditional methods to create their cheeses.
